Potato & Sharp Cheddar Cheese Pierogi
A new-school variation on pierogi ruskie, utilizing tangy sharp cheddar cheese in place of ricotta. We start with light and fluffy riced russet potatoes, add deeply caramelized onions, and melt in a generous amount of freshly grated sharp cheddar cheese.
These pierogi are excellent when served with crispy fried bacon and chives or green onion garnish. Your family is sure to love them!!
